Okra with olive oil
Ingredients
- 1/2 kg okra
- 1 medium onion peeled
- Juice of 1/2 lemon
- 1 small teacup grape vinegar
- 3 medium tomatoes, peeled and chopped for cooking
- 1 small teacup of water
- 3 tablespoons of olive oil
Preparation
- Soak okra in water with vinegar for 5 minutes, wash it, then let it dry to extract.
- After extracting the okra by cutting the tops in a cone shape, you can add the olive oil by placing the okra in the pot. (NOTE: If you are not bothered by the flavor of dried onions at dinner, you can chop the onion, cook it with some oil, and then add the okra.)
- Then the tomatoes are added and mixed. In the center of the pot are placed dried onions whole.
- Add the lemon juice and water and close the lid of the pot. It is adequately cooked over medium heat until it boils, then over low heat. It is taken to the serving plate and serviced after cooling.

Note: For those who do not like dried onions and are uncomfortable, onions are used whole in the okra recipe with olive oil. You can also use this method on other vegetables, such as green beans.
